In-Person Classes

From fresh pasta to focaccia, learn to cook Italian classics in our hands-on, small group cooking classes.

Classes run from September to the end of April.

Classes are held in Natalina’s Professional Teaching Kitchen located 2 minutes North of Guelph. The address and directions will be provided when you register. We are open by appointment or class only.

2017 was our busiest school year ever, we couldn’t accommodate all the requests for our in-person classes. So we’ve launched our most popular 6-week course as an online program. You can learn at your own pace, with many additional resources and recipes that will have you cooking like an Italian Mamma in no time!

Online courses are available to everyone, all the time! In your kitchen, on your schedule at a fraction of the cost of In-person classes!

A full day, immersive, Italian food culture experience.

$175 + HST

This full-day experience will have you living like an Italian with Natalina as your guide! We will start with a light Italian style breakfast in a local, downtown Guelph coffee bar and then off to the Farmer’s Market to shop for our local, seasonal ingredients.

Back at the cooking school, we will prepare bread, a 4-course “Pranzo” including dessert and a small preserving project with a jar to take home!

Themed Classes

Bread & Focaccia,*New* recipes

Baking bread is making a comeback and we are excited to share our favorite recipes and techniques with you! In this class we will make a “No Knead”, wholegrain, crusty loaf, a Traditional Barese style Focaccia (made with assorted flours and potatoes) and a sweet Italian Brioche (used for Easter Bread). We discuss different flours, yeasts, and bread techniques. Guaranteed to make YOU a Bread Baker and impress your friends!

We will include a traditional, light, Antipasto style lunch; focaccia, charcuterie, olives, cheese, tomato salad, sweet brioche & espresso.

A half loaf of crusty bread goes home with all participants!

Fresh Pasta & Meat Stuffed Cannelloni

One of our most popular classes! This time we will share a traditional egg noodle pasta technique used to make Meat Stuffed Cannelloni (a portion to take home) and a special “Spaghetti alla chitarra ” with a tomato, basil sauce. This second pasta will be served for lunch alongside a salad, mineral water, and Affogatto for dessert.

Wood-Fired Oven Pizza & Focaccia

$98 + HST

We are excited to be the only cooking school in the area with a wood-fired oven, direct from Italy!

Learn to create an authentic thin crust, wood-fired pizza and focaccia, as well as how to adapt your conventional oven to get good results. Due to the long rising time, the pizza dough will be prepared before the class (recipe provided) and the class will focus on the premium ingredients, specialty flours & yeasts, seasonal toppings and baking method. This class includes recipes, instruction and lunch including focaccia, assorted antipasto, seasonal salad, assorted pizzas and dessert!

Olive Oil Tasting and Demonstration Class*

$120 + HST

Anyone that has taken a class with Natalina knows she is passionate about REAL Extra Virgin Olive Oil! In this class you are led through an Olive Oil tasting that will highlight how to choose an authentic, extra virgin olive oil and how to spot a fake one. Natalina will then demonstrate a 3 course, “from scratch” menu with Extra Virgin Olive Oil as the star!

In this demonstration-style class, Natalina will prepare a Caprese Salad2; fresh pasta1 with fresh tomatoes2, basil2 & EVOO and Lemon, olive oil cake with Lemoncello Cream1.

* Includes a 250ml bottle of Extra Virgin Olive Oil, received in class

When children are first interested in cooking… this is an ideal time to introduce them to the wonders of the kitchen! Natalina and her daughter both discovered the kitchen and baking at a very young age!

In this camp, the students will learn popular, kid-friendly, savory recipes and desserts. From meatballs, chicken cutlets, fresh pasta, and gnocchi, to crepes, churros, crostoli and more, we will cover basic cooking skills such as chopping, mixing, kneading and rolling dough. An interest in cooking and helping in the kitchen is a must for this camp!

We will provide a short break with either a walk around the neighborhood or coloring their take-home recipe book! Lunch is included and leftovers go home with the participants.

Corporate & Private Groups

Due to the growth of our tours, interest in our specialty classes, and our new online classes, private and corporate classes are no longer being offered. Consider booking an entire class of 10 for your group. With ample notice, you may choose to change the class type once you’ve registered your group.

Missed Class Policy

We purchase and order ingredients up to one week before your class. We are a small, intimate school and classes sell out fast. We often turn away students because classes are full. If you ask to switch classes it may be too late to sell it to someone else. For this reason, we can not offer refunds or exchanges on any course or individual class. If you must miss a class, you may send someone in your place or arrange for someone to pick up your recipes and food. This is standard policy in cooking schools.

Allergy / Special Requests Policy

We are a small cooking school that may not be able to accommodate all special requests for allergies, intolerances. Please email us first, to see if we can accommodate, before registering, as we have a No Refund policy.
