Spaghetti aglio e olio

The easiet pasta you can makein a pinch! My go-to when the cupboards are bare and you need something fast!

  • 1 package of dry pasta or fresh 1 pound
  • 1/3 cup of good quality extra virgin olive oil
  • 8 large garlic cloves
  • ½ tsp crushed chillies
  • ¾ cup parmesan cheese
  • Chopped parsley optional
  1. Method:
  2. Cook pasta according to directions. Meanwhile….heat the olive oil in a large pan. Add the garlic and sauté until golden. Add the chili. When the pasta is al dente , save about 1 ½ cups of the pasta water and strain the pasta.
  3. Add about 1 cup of the water to the pan, stir ands reduce to half. Add pasta and more water if necessary. Stir to coat and heat through. Season to taste with salt and pepper. Pour into serving platter, add cheese and optional parsley. Stir and serve!
