Meyer lemon and honey vinaigrette (gf)
A lovely light dressing to add to tender steamed vegetables or salads, makes 1 cup of dressing.
Ingredients
1/4
cup
Meyer lemon and honey vinegar
1/2
tsp
dijon mustard
1
tsp
minced shallot or spring onion, wjite part
salt
to taste
black pepper
to taste
1/2
tsp
honey
3/4
cup
extra virgin olive oil
1
tsp
minced parsley*
*optional
Instructions
Place everything in a jar with a lid and shake until mixed and emulsified. Taste and adjust salt/pepper and other ingredients to taste.
Makes 1 cup of dressing, refridgerate leftovers.
