Meyer lemon and honey vinaigrette (gf)

A lovely light dressing to add to tender steamed vegetables or salads, makes 1 cup of dressing.

Ingredients

  • 1/4 cup Meyer lemon and honey vinegar
  • 1/2 tsp dijon mustard
  • 1 tsp minced shallot or spring onion, wjite part
  • salt to taste
  • black pepper to taste
  • 1/2 tsp honey
  • 3/4 cup extra virgin olive oil
  • 1 tsp minced parsley* *optional

Instructions

  • Place everything in a jar with a lid and shake until mixed and emulsified. Taste and adjust salt/pepper and other ingredients to taste.
  • Makes 1 cup of dressing, refridgerate leftovers.
